Interesting topics will be sorted on random order. This can come in handy if you have important topics from that forum that you want to expose and make your members aware of their existance. This is more or less like the pin topics functions, but for forums instead. You can select which groups can mark topics as interesting, which group can view the interesting topics and how many topics to show.
